Cinnamic acid(CAS NO. 140-10-3) is a white crystalline compound with the formula C6H5CH=CHCOOH that is slightly soluble in water, and freely soluble in many organic solvents.

Cinnamic acid exists as trans and cis isomers, but the trans form is the one most often found in nature and is the article of commerce. It is obtained from cinnamon bark and balsam resins. It is synthesized by the Perkin reaction between Ac2O and PhCHO.

Production of Trans-Cinnamic Acid

3 - prepared from cinnamaldehyde and benzal chloride or by the Knövenaegel–Hans condensation reaction

Uses of Trans-Cinnamic Acid

Trans-Cinnamic acid is very important because it is widely used in perfume, food, photographic, polymer and pharmaceutical industries.




1)   Flavors and fragrances

1.1 Used as a flavoring agent for bakery goods, confectionaries, beverages, and toothpaste.

1.2 Used to impart fragrance in air fresheners, soaps, and cosmetics.

1.3 Used as a blender in perfumes, particularly for floral fragrances.

1.4 Used in products where a spicy character is required such as in mouthwash and chewing gums.

2) The perfume industry

Trans-Cinnamic acid is involved making of the methyl, ethyl, and benzyl esters for the perfume industry.

3)Others

Cinnamic acid acts as a precursor to the sweetener aspartame due to enzyme-catalysed amination to phenylalanine. And it is also a type of self-inhibitor produced by fungal spores in order to prevent germination.
